I’ve started to cook a lot of vegetarian dishes lately. This one is one of my favorite! As you probably have noticed I like when these (everyday meals) take a maximum of 30 minutes to make. During the weekends I don’t have any problems with spending a lot of time cooking, but somehow I find it to be boring during the week. I just want it over with! Anyway, here we go:

Easy halloumi in a tomato sauce
4 portions

  • 400 g of halloumi
  • 1 chopped yellow onion
  • 1 chopped garlic clove
  • 1 tbsp of tomato paste
  • 400 g crushed tomatoes with chili
  • 1/2 cup of water
  • 1/2 cup of whipped cream
  • Salt and pepper
  • Rice

Step 1
Boil the rice.

Step 2
Dice the halloumi and fry it in a pan, add onion, garlic and tomato paste. Fry it for a couple of minutes.

Step 3
Add crushed tomatoes, water, cream. Let it simmer for about 10 minutes, and add salt and pepper

Step 4
Eat and ENJOY! I also added some parsley on top, but that’s mostly for the picture 😉
